When I visited the Falasteen territory in 2016, one of the places I visited gave me a lunch of a flat bread with melted cheese with a mixture of za'atar and oil spread over the cheese. The flat bread was folded in half and I ate it. I enjoyed it very much. When I saw the cheese on this site I had to get it so I could authentically recreate that awesome dish, which I did. It was great (my flat bread needs some work) but the cheese was delicious. I soaked two of the logs in water to remove much of the saltiness and grated it for my flat bread. I tried the cheese both salted and with the salt removed and both are enjoyable. I plan to make a pizza with it too. I will probably get more of this cheese after I use it up.

This cheese is flavourful and gives the feeling of being back home on the countryside. Perfect for frying and enjoying for breakfast or in a fresh salad. So well preserved that it will last you a while, that is of course if you can practice self control.
